New Running rigging

My Mark I (#891) had been sitting unused for 20 years in the strong Colorado sun and I suspect it would be a good idea to replace all the lines. Could you give me recommendations as to type of line to use (ie Stayset, Stayset X, dyneema, crystalyne, etc.) and line diameters for:

Jib Halyard
Jib downhaul
Jib sheets
Main Halyard
Main Sheet
Spinnaker pole topping lift/downhaul
Spinnaker sheets
Genoa sheets if different from jib sheets.

I intend at some point to add the hardware to have all lines lead to the cockpit. What would the length of the lines be if led to the cockpit and would the extra length get in the way until I get the hardware. Is there any problem with the ability of cabintop cleats to hold the main halyard and jib halyard as opposed to cleating them on the mast. Where would you install those cleats.

Thanks , Burt
