You know I enjoy reading about all the heavy air sailing that folks seem to like to say is so much fun. But there is a limit to what is fun and what is safe for a San Juan 21. Have you ever been in a short chop 3 to 4 feet and got the foot of your jib filled with water in a gust (she will go over). Keep your hatch board in and the keel pinned if you want to survive. Once you get over 25 kts. the mast starts to pump going down wind and I know from experience it will come down (then you have a whole different set of problems).

Be prepared for heavy weather but don't go out because you think it is safe in a San Juan 21. May be fun for a while but it may cost you.
